New BayTowne Exclusive: Transcontinental Rum Line El Salvador 2007 Single Cask
Distilled in a column still in 2007 from fermented molasses and matured in ex-Bourbon barrel, this single cask spent 10 years in the tropical climate of El Salvador before crossing the Atlantic Ocean to age 4 more years in Europe. A unique expression bottled at full proof with adulteration.
Profile: Ample and rich
Nose: Fruity and unctuous; tobacco; walnut; unroasted coffee
Palate: Smooth and refined; coconut milk; clove; mahogany wood
Finish: Medicinal and long; vanilla bean; toffee; orange peel
New BayTowne Exclusive: Through The Grapevine Fanny Fougerat 1995 Borderies, Cognac Single Cask
Descending from 4 generations of winegrower-distillers, Fanny Fougerat took over the estate in 2013, keen to valorize the family's cognacs in ways other than in the major trading houses' blends. With 30 hectares, only planted with Ugni Blanc, she works on the smallest cru of the Cognac region: Borderies. Fanny's cognacs aren't caramelized, filtered, nor blends from different crus. Distilled in 1995 without the lees, this vintaged cognac perfectly embodies her vision: creating fresh and precise eaux-de-vie. This cognac started aging in a dry cellar and finished maturing in a humid one, giving a rounder character. It was bottled in September 2022 without reduction at 57.8% for BayTowne Wine & Spirits.

Nose: Precise and airy; peach in syrup; jasmine; cardamom; yuzu; cedar
Palate: Upright and spicy; lavender; white pepper; candied apricot and bitter orange
Finish: Enveloping and smooth; white tea; gunflint; orange marmalade and balsam
